    • Is Food Driving You Around?
A client of mine who recently went through the 21-day Simply Human Reset was led to make a pretty profound realization about food and how we think about it (I guess the Reset worked…ha). The recognition was specifically this — that events and parties and social gatherings should not be driven by the FOOD which will […] Is Food Driving You Around? is a post f […]

    • Kelp is the New Kale
I have to share with you how much I love eating kelp. You can buy it in the dehydrated form in many health food stores, but recently I got to try some raw kelp in a slaw and it was so much better. Kelp has been a staple for thousands Read more...

    • “Matambre” Rolled Flank Steak

Traditional fillings for this South American dish include garlic, spinach, bell pepper, carrots, olives, hardboiled eggs and fresh herbs. Jerk Chicken/Seasoning

One of our go-to meals is a Jerk chicken, either cooked in my ceramic roaster or on the grill rotisserie. I make my own seasoning, rub it under the skin and let the grill or oven do the rest to make a delicious and moist chicken.

JERK SEASONING

2 Tablespoons minced onion

2  1/2 teaspoons thyme

2 teaspoons allspice

2 teaspoons black pepper

1/2 teaspoon salt

1/2 teaspoon cinnamon

1/2 teaspoon cayenne

Mix all ingredients.  Yields a little more than 1/4 cup, enough for at least one chicken.

May double or triple recipe and keep unused portion in airtight container.

Rub under skin of entire chicken and coat outside skin of chicken.  Roast or grill to your liking, making sure chicken reaches 180 degrees in the breast.
