Last Minute Chicken

I found myself having too much fun on Sunday and didn’t do a good job of planning the family meal.  I had some leftover chicken I had roasted on my ceramic roaster.  Normally I would whip up some Better Butter Chicken, but I wanted something different.  Here’s what I did with the leftover chicken.  Everyday Paleo’s Chimichurri Sauce added a great finish to the dish.  We loved it, so you get the recipe!  

You could add/change the spices and veggies to make this versatile dish your own.  Next time I may add some diced tomatoes.

Last Minute Chicken

Leftover chicken, torn into bite size pieces, about 3 cups

5 green onions, chopped

A generous pinch of the following spices:  celery salt, tumeric, cumin, ground thyme
2 T olive oil

1 T coconut oil

Stir chicken and spices together in hot skillet with the oil until heated through and spices are blended in.

Serve topped with Chimichurri Sauce.  We served our Last Minute Chicken with Steamed Broccoli,  Bacon Wrapped Asparagus made with leftover raw bacon I saved from breakfast, and sliced tomato and sliced avocado.  Yumm!

Chimichurri Sauce

½ red onion

4 garlic cloves

1 ½ cups chopped cilantro

1 cup chopped parsley

juice from 1 lime

¾ cup olive oil

1 tsp sea salt

black pepper to taste

Place all ingredients in a food processor and process on low until the mixture is almost smooth but still a bit chunky.  Serve on everything!
