Meals fit for a King (and Queen)

My wonderful in-laws will be here tomorrow for a week and I have been busy putting together a Paleo meal plan.  We are not even going to mention the absence of pasta, bread, and sugar…..hopefully they won’t notice!  I’ll let you know how it goes.


Dinner 1: Puerto Rican Beef with Mashed Sweet Potatoes/Feelin’ Peachy for dessert (from Everyday Paleo book)

Dinner 2: Spice Rubbed Crock Pot Chicken/Pear Salad (from the book also).  We have an evening function at the school so I figure the chicken and salad will be something easy to have ready either before or after.

Dinner 3: Bunless Burgers on the grill/Grilled corn on the cob (not strictly Paleo but we are doing it anyway)

Dinner 4: (Serving six guests) Kabobs on the grill/appetizers include nitrate free sausages on the grill/Bacon Wrapped Stuffed Dates (from the book)/ Walnut dip with veggies (book)/deviled eggs/Nutty Cookies for dessert

Dinner 5: Ginger Carrots and Mahi Mahi

Dinner 6: Better Butter Chicken/Warm Sweet Potato Salad (from Everyday Paleo blog)

Breakfast 1: fried eggs/ meat/Paleo Apple Muffins

Breakfast 2: Spanish Tortilla/Meat

Breakfast 3: Paleo Pancakes with Fried Apples

Breakfast 4: Frittata for All (book)

Breakfast 5: Omelets

Breakfast 6: leftovers!

Lunch:  I plan on making some Chicken Salad and having plenty of nitrate free lunch meat on hand.  We will probably be sight-seeing most days during the lunch hour and will most likely eat out.

We’re so excited to get to cook our delicious Paleo food for our family, but these dishes are guest-worthy not because they are Paleo, but because they are DELICIOUS in any setting!
