Baked Curry Cauliflower

A great side dish from the Everyday Paleo book by Sarah Frogoso.  Cauliflower is hard to “liven” up, but we served this dish to our guests over the weekend with great success.  

Baked Curry Cauliflower

1 head of cauliflower, stems removed

3 Tbl coconut oil

1 Tbl curry powder

1 tsp garlic powder

1/4 tsp tumeric

sea salt to taste (optional)

Preheat oven to 350 degrees.  In a medium sized mixing bowl, toss the florets with the oil until well coated.  Sprinkle all of the spices over the cauliflower florets and stir again to evenly coat.  Spread cauliflower in a glass baking dish and bake 40-45 minutes, stirring half way through the cooking time.
