BALSAMIC GARLIC CHICKEN OR PORK

Here’s an easy chicken recipe with ingredients found in every pantry….from Southern Living Magazine, July 2010.   This would also be good with pork chops!

BALSAMIC GARLIC CHICKEN BREASTS

4 boneless, skinless chicken breasts

1 t salt

1 t pepper

2 T butter

1 T olive oil

1/2 c chicken broth

1/4 c balsamic vinegar

1 T fresh lemon juice

3 garlic cloves, minced

1  1/2 tsp honey

SPRINKLE chicken with salt and pepper.  MELT butter and oil in large skillet.  ADD chicken and cook on each side until done.  REMOVE chicken and keep warm.  ADD chicken broth and next 4 ingredients to skillet and cook until slightly thickened, about 5 minutes.  Stir loose particles from bottom of skillet and serve sauce over warm chicken.
