Jerk Chicken/Seasoning

One of our go-to meals is a Jerk chicken, either cooked in my ceramic roaster or on the grill rotisserie. I make my own seasoning, rub it under the skin and let the grill or oven do the rest to make a delicious and moist chicken.


2 Tablespoons minced onion

2  1/2 teaspoons thyme

2 teaspoons allspice

2 teaspoons black pepper

1/2 teaspoon salt

1/2 teaspoon cinnamon

1/2 teaspoon cayenne

Mix all ingredients.  Yields a little more than 1/4 cup, enough for at least one chicken.

May double or triple recipe and keep unused portion in airtight container.

Rub under skin of entire chicken and coat outside skin of chicken.  Roast or grill to your liking, making sure chicken reaches 180 degrees in the breast.
