Pumpkin Pancakes

Here is another great pancake recipe using almond flour.  We have been enjoying this one for over a year now.  It’s packed with Omega-3 rich eggs and lots of protein, so I don’t feel bad serving them to my daughter with a side of bacon and some fruit.  The original source is the Paleo Comfort Foods recipe book, edits are mine.   Continue reading

Banana Bread Pancakes

With summer break finally here, we are taking it a bit easy in the mornings and having a little fun with breakfast.  Here are two pancake recipes we have been enjoying lately, BANANA BREAD PANCAKES and PUMPKIN PANCAKES (next post).  Feel free to add fresh fruit or even dark chocolate chips for a really special treat.   Continue reading

Paleo Pumpkin Pancakes

We have been making this recipe almost every week since September when we first received our PALEO COMFORT FOODS recipe book.  This is our favorite breakfast treat and my 6 year old has it almost every day with our new favorite almond butter BARNEY BUTTER, and blueberries.  There are so many Omega-3 rich eggs in this recipe I can hardly feel bad about giving her “pancakes” for breakfast.

Egg Cupcakes

Frittata for All

Served this great frittata from the Everyday Paleo book to our guests over the weekend.  This is a very versatile recipe, as you can add meats and veggies to your liking.  It’s a great way to use up leftovers.  Cooking Paleo is never boring! Continue reading

Paleo Pancakes

My family often has gluten free pancakes on the weekend but today we tried this Paleo Pancake recipe shared by Paul on Everyday Paleo.  Read Paul’s story HERE of  how he and his family adopted a Paleo lifestyle. Continue reading

Paleo Apple Muffins

I made Everydaypaleo’s Paleo Apple Muffins yesterday and they were a hit with the kid, the hubby and the neighbor :).   The recipe made 18 and there is currently one left (not for long!).  They are great alone but extra special with butter with your morning coffee.  The recipe is very versatile.
