Chicken Salad

At the request of a very dear friend, here is my recipe for Chicken Salad.  It does contain mayo, which is not Paleo unless it contains no bad oils.  I have not found a store bought mayo that meets Paleo criteria, but there are a few promising recipes on the web which I plan to try next time.  

1 whole chicken breast, broken into small pieces (I used the breast of a rotisserie chicken)(could use dark meat or combination of both – whatever you have on hand)

1/3 c chopped red onion

1/3 c chopped celery

handful of red grapes, cut into small pieces

1/4 tsp black pepper

1/4 tsp sea salt

1/8 tsp curry powder (don’t use too much!)

1/2 cup mayo (I used Hellman’s real mayo) – may need more depending on your liking

Mix all ingredients together and serve over large lettuce leaf with fresh cherry tomatoes.
